This book is in dedication to the victims of the Gilroy Garlic Festival shooting that occurred in Gilroy, California. The mass shooting occurred on July 28, 2019 which resulted in multiple deaths and thirteen people injured. My heart goes out to all of the families of the ones whose lives were taken from this tragic incident. The Garlic Festival book explains the different and creative things one can do with fresh garlic. It also explains the multiple dangers, benefits, and uses of garlic.

CHAPTER ONE
THE HISTORY OF GARLIC
“Let food be thy medicine, and medicine be thy food”, these are the well-known words of the ancient Greek physician who was known as the father of western medicine named Hippocrates. It was Hippocrates who actually used this special herb known as garlic to help treat several different medical conditions. Garlic (disambiguation) is a very unique food in that it has many benefits and healing properties. Garlic has been used for many, many centuries by many different cultures and people today. An interesting fact about garlic is that it is considered a species of vegetable in the onion genus, Allium that has a Binomial name of Allium sativum. Allium sativum is a bulb-like plant that can grow up to a whopping 3.3 feet in actual height while producing hermaphrodite flowers. Garlic is pollinated by various bees, insects, butterflies, and moths and has relative vegetables which include the shallot, chive, leek, onion, and the Chinese onion. Garlic's scientific classification is from the Kingdom of Plantae, and garlic is also from the Clade of Angiosperms. Garlic is from the Clade of monocots, from the order of Asparagales, from the family of Amaryllidaceae, the subfamily of Allioideae, and this beautiful vegetable is from the Genus of Allium.
Garlic is considered a food, an herb, and a vegetable. It has well over 70 active ingredients and is used in various creative ways. It is a very strong herb and increasing your garlic intake can be easy for the most part if you are determined to. A good friend of mine and myself have both eaten raw garlic cloves many times and have seen firsthand the amazing results by eating this very unique herb. After taking garlic, both of us have realized that garlic stabilizes our blood pressure, rids our bodies from harmful parasites in our gut, and helps to boost our immune systems.

When taken by mouth, this powerful herb can cause bad breath for many. Though I tend to have stinky garlic breath a good time after eating many of these heavenly garlic cloves, I do know that consuming raw Garlic definitely does wonders for my body, mind, and blood and well as for my friend’s too. When I do take this wonderful vegetable called garlic, I can always expect to have a healthy garlic burning sensation in my stomach soon after chewing it up and swallowing it. Don’t worry though, this weird garlic burning sensation is very normal after consuming this vegetable as it is all a part of the garlic being digested. Garlic is also known to help people shed fat and lose weight as well and contains many healthy compounds with very powerful medicinal properties. Oddly enough, It is very low in calories but at the same very high in nutrition. Garlic can fight off many diseases and the common cold while containing various active, natural compounds that can help reduce blood pressure in people who take it. Garlic is also known in greatly improving bad cholesterol levels in people and may even help in combating heart disease in some. This special vegetable known as garlic is not only a native vegetable to Central Asia but also to the Northeastern part of Iran and for a long period of time this vegetable has been a special seasoning all around the world. Garlic has a deep history of many thousands of years of human use and consumption and has been used as both a common food flavoring and also as a very traditional medicine in different countries. Garlic was used for a food given to the poor and impoverished people in ancient Rome while the country of China is known to have produced around 80% of the world’s main supply of Garlic. The etymology of the word Garlic is very interesting in and of itself as it originated from Old English, Garleac, which means gar (spear) and then leek, that has to do with spear-shaped leeks. Today, there are 11 special and very different health benefits of this thing called garlic that are truly supported by human research. The first health benefit out of this group of 11 benefits is the amazing fact that garlic actually contains certain compounds that have very powerful medicinal properties. Given the fact that garlic is a unique plant in the Allium (onion) group, it is very closely related to such things as shallots and onions. Each and every part or segment of a bulb is known as a garlic clove and there can be up to 20 cloves just in one single bulb alone sometimes.

I was talking to someone one day about how it would be really smart if someone decided to come out with candied garlic. The combination of sweet flavors of candy coating mixed with a spicy garlic taste sounds cool and very innovative to me. If not candied garlic, than how about toffee coated garlic, yogurt covered garlic, or even kosher, pickled garlic. Garlic is a very versatile vegetable and provides many health benefits to people around the world. Throughout ancient history and across the world, many civilizations such as the Egyptians, Babylonians, Greeks, and Chinese used garlic regularly. Garlic was used profusely at the very beginning of recorded history and was even found in some Greek temples and Egyptian pyramids. In various different cultures in the past, Garlic was actually used to provide strength and to increase work capacity for many workers and laborers. Garlic was also given to many of the Olympic athletes in the country of Greece and considered one of the earliest “performance enhancing” agents back then. An interesting fact to know about garlic is that it was part of the daily diet of ancient Egypt. This small but yet super healthy vegetable was also found in the tomb of King Tutankhamen. The presence of many garlic cloves in the tomb of King Tutankhamen is powerful evidence that garlic was used at around that time. According to the Word of God, some Jewish slaves in ancient Egypt were fed this vegetable along with other allium vegetables too. This was so that the slaves would gain more strength and increase their productivity. It was the Talmud that supposedly recorded various health benefits of garlic while also suggesting it for married couples to take. Garlic was also found to be in palace of Knossos in Crete around 1400 to 1800 BC, which was very well-preserved. This vegetable was associated with war and was given to soldiers as it was suppose to give them courage and bravery. In Ancient China and Japan, this vegetable was used as a general food preservative and was formed as part of the daily diet along with raw meat for many of the Chinese and Japanese people. Garlic was also used in Ancient Japan and China as part of to help in digestion and respiration as well as aiding in lifting depression in some.

THE DANGERS OF GARLIC
Scientists today have found out that most of Garlic’s phenomenal health benefits are actually caused by certain sulfur compounds that are formed when a garlic clove is chopped up, crushed up, or just chewed. Some of the significant major compounds in Garlic that play a huge role in garlic’s amazing health benefits include Sallyl cysteine and diallyl disulfide. In only a 1-ounce serving of this vegetable, one will find 23% Manganese, 17% Vitamin B6, 15% Vitamin C, 6% Selenium, and 0.6 grams of Fiber which are decent amounts. Garlic also contains small amounts of various other nutrients and minerals and is very rich in vitamin C.
Every now and then I will peel several garlic cloves and then put them all in a sealed container for a good friend of mine to eat and enjoy. Today, I can now see how eating raw garlic has made a healthier difference in my friend’s life. The strange but unique thing about raw garlic is, that even though the herb garlic is tremendously healthy for people all over the word to consume, it is also very inexpensive to purchase and only usually costs just a few dollars for 3 bulbs. If you decide to break up the head part of garlic, you will eventually get several little garlic cloves. Believe it or not, most garlic recipes today call for several garlic cloves ,so when you go to the store to purchase this vegetable, make sure you’re buying a whole head of garlic so you will have plenty. When you cook with garlic, you’re almost every time going to use only a few cloves from the main head or bulb of garlic. A head of garlic is also sometimes known as a bulb or garlic and it’s really common to sometimes get confused as to what a clove is and what a head of garlic is. Garlic does pack a very potent punch of flavor and taste so do not be fooled by its very small size. The actual number of cloves in one head of garlic really depends on the variety, and can extend from as few as four cloves to up to thirty or more for other different garlic varieties. Garlic can also be very dangerous in your kitchen as a vegetable if it starts to sprout. Sprouting on a garlic clove is considered very unsafe for eating because if moisture does get in the garlic clove in any shape or form, it’s a very mild form of salmonella will start to grow in there and can give someone an upset stomach. Make sure that why you do buy garlic at the store, it’s tight and sealed up correctly. Also look out for the sprouts so that you do not accidently buy a sprouted garlic bulb. Another serious danger of Garlic is when you try to feed it to your dogs or cats. Fresh Garlic is very poisonous to both cats and dogs, even in only small amounts. Even though many things that we humans eat are very edible to us, certain food products such as the vegetable garlic, can be very toxic to dogs and cats. Basically, it is wise to be very careful what you intend to feed your dog and cat so as to not give them anything that could possibly be very poisonous to them. Garlic is especially extremely poisonous to cats and dogs in its powdered form, like as in certain seasonings. It is found out that certain dog breeds such as the beautiful Japanese dogs like the Akita, Shiba, and the Inu are more sensitive and affected by garlic than most. The main reason why this is is somewhat unclear today. Some professional experts today believe that it is generally because of a strangely high red blood count and very low levels of glutathione and regular potassium. Garlic poisoning can do major damage to the red blood cells which can eventually cause serious gastrointestinal upset issues along with vomiting problems too. The actual amount of fresh garlic you decide to give to your dog or cat should only be a very small amount for them to safely consume. Remember this, garlic in any form is not the best thing to give to your cat or dog as you could accidentally end up giving them way too much. Immediately take your dog or cat to the local veterinarian's office if you ever think your dog or cat has eaten any amount of garlic , even if the animal does not show any visible signs or symptoms of being poisoned because it is better to be safe than sorry. Believe it or not, feeding your pet dog or cat mere table scraps that have only been seasoned with generic garlic powder is also considered one of the most common causes of garlic poisoning. Being able to recognize the obvious signs of garlic poisoning in your pet dog or cat early can help you in saving your animals life when you think about it. Some of the most general and yet obvious signs of garlic poisoning in dogs are signs like abdominal tenderness and painful cramping, anemia, bad breath, collapse issues, depression problems, excessive drooling, lethargy, anorexia issues, dehydration, pale gums, nausea, and even brown or red-colored urine.
CHAPTER THREE
THE BENEFITS OF GARLIC
This vegetable known as garlic has been known to have a large range of health benefits both raw and cooked and has a tremendous amount of antibiotic properties in it. Garlic has been used for thousands of years and records has indicated that Garlic may have been used when the Giza pyramids were actually built, around 5,000 years ago. It was Hippocrates who actually promoted the wide use of garlic for treating and curing respiratory issues, poor digestion, parasites, and extreme fatigue in people. The ancient Olympic Grecian athletes were given garlic as a possible “performance enhancing” agent used in various sports. All throughout history in the East Asia, Middle East, and the country of Nepal, the vegetable Garlic has been widely used to treat hypertension, tuberculosis, liver disorders, dysentery, colic, intestinal worms, bronchitis, diabetes, and fevers. Today, garlic is currently used to help treat several major conditions linked to the blood system and the heart, including coronary heart disease, hypertension, and atherosclerosis. IT is used today also by some for the prevention of lung cancer breast cancer, stomach cancer, rectal cancer, and colon cancer. Interestingly enough, it is important to know that a certain study that was published in the Food and Chemical Toxicology journal had warned people that short-term heating may reduce the anti-inflammatory effects of fresh raw garlic extracts and this could be an issue or problem for some who do not like the taste or odor of fresh garlic. A certain study performed at the Jiangsu Provincial Center for Disease Control and Prevention in the country of China found that certain people who decided to consume raw garlic at least two times a week during a 7 year study period had a 44 percent lower risk of manifesting lung cancer. The researchers who had published their study had made face-to-face interviews with 1,424 lung cancer patients and 4,543 healthy people. The Organo-sulfur compounds that are found in garlic have been identified as very effective in killing and destroying the cells in glioblastomas which is a dangerous type of brain tumor. It is also found that women whose diets are rich in allium vegetables had a much lower level of osteoarthritis. The authors said that their findings not only highlighted the impact of diet on osteoarthritis outcomes but as well as demonstrated the potential for using certain compounds that are found in garlic to create treatments for the condition. This long-term study that involved well over 1,000 healthy female twins, had found that those women dietary habits included a variety of vegetables and fruits. If you did not already know, a study published in the Journal of Antimicrobial Chemotherapy found that the Diallyl sulfide compound in garlic was 100 times more effective and powerful than two very popular antibiotics in fighting off the Campylobacter bacterium.

THE DIFFERENT TYPES OF GARLIC
Besides just consuming raw garlic as an everyday vegetable, garlic is also used as a supplement as well. There are many key factors to seriously consider when choosing a specific garlic supplement. First off, one should decided if they want a garlic product with or without any odor. Garlic’s very strong smell and odor is caused by the chemical known as allicin, which is also believed to be the vegetable’s most active ingredient. Concentrated garlic is generally very powerful and potent and some people actually find garlic odor way too strong for them to tolerate. Today, there are many manufacturers who have produced smart garlic products that are odor-free for people to buy. Though these odor-free garlic products may not be as effective as other stronger, garlic supplements that are out, they can still give certain nutrients that regular garlic already has. One such odor-free garlic product is known as Kyolic Aged Garlic and is sold in certain stores. Raw garlic can be used in a multitude of ways and can be cooked in a variety of ways too. Besides oven-roasted raw garlic bulbs, raw garlic can be grilled on a grill, it can be deep-fried to crispy deliciousness, garlic can be blended up in a blender and used minced in spreads, dips, and salsas, or it can be used to put in some traditional dishes such as spaghetti sauces. I really enjoy consuming raw garlic oven roasted because of the phenomenal, mellow garlic flavor and taste that it provides. Roasted garlic brings a powerful garlic-like smell while also bringing various powerful health benefits to you as well. Garlic that is roasted in olive oil can bring a wonderful, melt in your mouth flavor and texture while being a very healthy vegetable addition to your regular diet. There are different types and kinds of garlic that are out today. Did you know that there are well over 600 different varieties of the vegetable garlic that are grouped into two general subspecies? Yes, this is a true fact. The two main subspecies that garlic is grouped into are called ophioscorodon (hard neck) subspecies and the sativum or “soft neck” subspecies. Garlic is also classified further into ten major groups for garlic. If you want to know which types of garlic belong to the subspecies known as the Hard neck subspecies they are known as the Asiatics, Creole, Turban, Rocambole, Porcelain, Purple Stripe, Marbled Purple Striped, and the Glazed Purple Striped. And, If you want to know which types of Garlic belong to the Soft neck species, they are simply the Silver skin and Artichoke subspecies. Even though the vegetable garlic has been cultivated for literally thousands of years, there has been very little scientific research into the multitude of different varieties of garlic. It is only by DNA that one can truly prove if garlic is actually unique. Soft neck garlic is most likely the kind of garlic people will see in the produce section of their local grocery store. The Soft neck name is derived from the multilayered parchment covering that covers the whole garlic bulb, goes up the neck of the bulb of garlic, and then forms a soft, flexible stalk that is suitable for braiding. It is soft neck garlic that typically has several different layers of cloves surrounding the center area of the garlic bulb. It is the garlic's outermost layer's cloves that are the stoutest as the cloves of the inner layers become more little closer to the center area of the garlic bulb. Out of the various different kinds of soft neck garlic, there are two that are most abundant. The Silver skin garlic is a very easy to grow variety of garlic that has a powerful flavor and really stores great when dried, as it can last nearly a whole year under the correct conditions. It is the Creole group of Silver skin garlic that has a rose-tinted parchment covering it. Artichoke garlic has more of a milder flavor in it and may actually have larger and fewer garlic cloves than silver skin garlic has. One can store artichoke garlic as long as eight months at a time. This type of garlic may every now and then have small purple spots or streaks on the garlic’s skin.
Hard neck garlic varieties do not usually have a flexible stalk like the soft neck garlic has. When one buys hard neck garlic, it will usually have a firm stalk coming out from the top of the garlic bulb. Inside the actual garlic bulbil, there are over 100 very small cloves that are genetically identified to the garlic “parent” that is beneath. Even though many call these the “flowers” they are not really blooms at all. If the scape if ended up left on the garlic plant, the scape will fall over and die. The garlic cloves will then eventually spill onto the ground, however most of these never make it that far. The garlic Scapes can actually be a very delicious ingredient in one's cooking recipes and are edible.
The three general kinds of hard neck garlic are called Rocambole, Porcelain, and Purple stripe garlic. The Rocambole garlic type has a very rich, powerful taste to it. This type of garlic peel very easily and generally has just one set of garlic cloves which are found around the woody stock. This type of garlic can be stored for up to six full months.
Porcelain garlic is very similar to the type of garlic known as Rocambole in terms of flavor. This type of garlic known as Porcelain garlic usually contains four large cloves of garlic that are wrapped in a smooth, papery-like sheath. Believe it or not, porcelain garlic is often times mistaken for elephant garlic simply because its garlic cloves are so big in size. When you do purchase this type of garlic, it is good to know that Porcelain garlic can be stored well for up to eight months at a time.
Purple striped garlic is a hard neck type of garlic that is very famous for making the ultimate baked garlic. Today, there are many different kinds or purple stripe garlic, every one with unique, bright purple streaks on their beautiful sheaths. This type of garlic can store for up to around six months. One more very special member of the Allium group, is known as elephant garlic (Allium ampeloprasum). Elephant garlic has a somewhat bland and mild flavor though it is very large in size. Elephant garlic is known to taste like that of a leek and its healing properties are really small compared to that of other types of garlic.
CHAPTER FIVE
DIFFERENT BRANDS OF GARLIC PILLS
The moment you have decided on which type of garlic to use, please consider selecting garlic bulbs that are very dry and have no moisture. Also, choose garlic bulbs which have cloves that are really plump and have plenty of papery sheath on them. Above all, try to avoid any soft or crumbly garlic cloves when purchasing garlic. Garlic bulbs that have green shoots are not the best to choose from either as they are considered past their prime and are not recommended to eat.
To me, garlic is a very wonderful and amazing vegetable because of all of the really healthy and phenomenal benefits that it offers people. One day while at my day job, I had noticed a female employee had her water container filled up with water and had brought it with her to work. The interesting and very innovative thing about her water container was that this particular employee had actually decided to put several fresh, garlic cloves into her water bottle. When I saw this, I was both absolutely amazed and inspired by how creative she was in thinking about adding garlic cloves in her water bottle. This was truly an inspiring and very healthy idea this woman had thought of. Garlic is a vegetable so small, but yet so healthy, so beneficial, and so delicious to add to just about anyone’s diet. We should think outside of the box more often when it comes to what to create and what innovative dishes, desserts, and recipes we could actually come up with dealing with garlic. What about chocolate-covered garlic cloves for those of us who love chocolate candy or candy bars? Or how about Garlic infused tea for those who enjoy drinking hot tea with honey? We could start creating deep-fried garlic cloves to take over the deep-fried onion rings we find at fast-food restaurants as a more healthy alternative to the everyday, mundane deep fried foods we buy. We see lemon juice, lime juice, carrot juice, and pomegranate juice in stores but hardly ever see raw garlic juice. These are some really smart ideas I have thought of related to what can be done with such a powerful vegetable we find in grocery stores.
For those of you who do not necessarily like the smell and taste of raw garlic, garlic pills are a smart option to choose. If one does decide to take garlic pills, it is very important to monitor his or her blood pressure and cholesterol levels just to make sure that both of the risk factors are ok. It is important to know that a certain study was done that was eventually published in the “Annals of Internal Medicine” which had reviewed placebo-controlled tests and eventually came to an understanding that garlic pills do have a fair ability to lower cholesterol in people. The blood-pressure lowering ability in garlic pills is also of a fair amount but somewhat measurable. Some of the different brands of garlic pills that one can purchase at stores such as CVS Pharmacy or Walgreens are garlic pills like Nature’s Bounty Garlic Tablets, Sundown Naturals Odorless Garlic Soft gels, Olympian Labs Garlic Gold with Cinnamon Capsules, Nature Made Odor Control Garlic, and Mason Natural Garlic Oil.
This very special vegetable known as Garlic has been a popular staple in many different cultures for years on end and is still used profusely even today. Garlic is a vegetable chock full of vitamins and it is a very great choice of vegetable to consume in order to lower your cholesterol levels. With so many varieties of Garlic today, it is a very unique and different vegetable that many enjoy. Garlic really does great things for the human body and provides very little calorie intake. Taking the steps in incorporating fresh, raw garlic into your everyday diet can surely help many lose weight, lower high blood pressure, and help to maintain healthy immune systems. Garlic is an amazing candida killer, gut parasite destroyer, and general bacteria cleanser. My goodness, it is definitely this type of vegetable that has what it takes to aid in many worldwide in staying healthy.
CHAPTER SIX
GARLIC AND HONEY
Using garlic and fresh honey together can also aid in reducing your blood pressure and high cholesterol levels. Consuming raw garlic and fresh clover honey in combination greatly helps in combating the common cold and many general allergies one may have while also strengthening one’s overall immune system in their human body. This special mixture of raw garlic and clover honey also helps in rejuvenating your skin while also giving your skin a beautiful glow. With some simple dietary changes and better eating habits, you can more than likely achieve your desired weight quicker than you expect, when eating clover honey and raw garlic together. This amazing combination of consuming raw garlic and clover honey may not seem that appealing at first but it is very healthy and extremely beneficial for your overall health. Eating such a powerful vegetable such as raw garlic on an empty stomach can also aid in the general digestion and detoxification processes that take place in the human body. Consuming this vegetable with clover honey can really improve your liver's overall health, kick start your body's immune system tremendously, and they can also help in removing dangerous toxins from your body. If you plan on using raw garlic and clover honey for losing weight you can quickly prepare the following weight loss health remedy by just putting honey in a glass jar you may have while adding freshly peeled garlic cloves in the jar as well. CHAPTER SEVEN
GARLIC BRAIDING
Garlic today is used in a variety of different foods such as garlic bread, Garlic Hummus Dip, Garlic stuffed Olives, Roasted Garlic Pizza, and Garlic flavored tortilla chips. This vegetable is very special in that it has many health benefits that aid in healthy digestion and overall healing in the human body.
Have you ever wondered how Garlic braiding is done? Well, braiding garlic is a very smart and organized way to store your garlic properly. There are many more benefits and positive things to garlic braiding than only its general appearance. There is also the amazing convenience in being successfully able to quickly take a garlic or two whenever you want it or need it when you start to braid garlic on a regular basis. The art of braiding garlic can be somewhat intimidating at first, but eventually once you finally get the basic things down, you will be able to successfully create these innovative garlic ropes swiftly.
To start out, you will want to clean the Garlic bulbs very well before curing it. You may need to use a soft cloth in order to properly clean and the garlic bulbs correctly. Next step is trimming the garlic. To make sure that you actually end up with a beautiful and phenomenal garlic braid, you will want to properly trim the garlic bulb before you braid the garlic. Make sure to cut the long garlic roots that are attached to the garlic bulb itself. The garlic roots should not be that thick so you will be able to use regular scissors in order to trim the garlic well. Next up, you want to soak the garlic stems in water. In order for the garlic bulbs leaves to be very flexible so they become easier to braid, you will want to soak them all in a bowl of lukewarm water. Just allow the garlic bulb's leaves to soak approximately 20 to 30 minutes. Make sure you do not get the garlic bulbs wet as you soak the garlic bulb leaves. After soaking, allow the garlic bulb's leaves to sit and dry for around 15 to 30 minutes. The next thing to do is to select the three largest garlic bulbs and to Criss-cross them. In order to have a very beautiful braid, you will want to use around 12 garlic bulbs total. Set aside the three largest bulbs to the side to have as the start of the braid. Gently lay them on a very flat surface with one garlic bulb in the direct center, one to its left, and one to its right side. The middle bulb's leaves should really be pointed right at you, while the other two's leaves are eventually crisscrossed correctly over one another to create an X over the middle garlic bulb. Ok, now you can start adding garlic bulbs in order to braid. Go ahead and place a fourth garlic bulb right over the already existing bundle, in order for it to match up with the center bulb. Use the excess twine to correctly secure the fourth garlic bulb to the stack in order to make it much simpler when you start to braid. Next step will be to take two more garlic bulbs and properly align them with the two diagonal garlic bulbs in a nice Criss-cross way. Finally, you will now be able to start braiding. With all of the garlic bulb's leaves now properly aligned, it will now be time to start the braid. Always make sure you grab the two sets of leaves foNr each and every section as you start to braid. Now go ahead and take the two leaves from the right side and begin to cross them under the middle leaves, in order for them to become the centerpieces. The next step will be to take the two leaves on the left side and cross these leaves right under the center leaves. Repeat this process at least one or two more times. It is now time to add more garlic bulbs after you repeat the step of crossing the leaves. The moment you've started the Garlic braid, you will be able to add three bulbs. You should properly line the garlic leaves up with the existing ends of the garlic braids like you did with the second set. Go ahead and start braiding again for at least two more passes and repeat the process until you've added everyone of your bulbs.
